Carrots contain Vitamin A, which is important for good vision, but I’m not sure it’s particularly important for night vision- I think Vitamin A would be important for both our rods (the sensors in our eyes that we use most for low-light vision) and our cones (the sensors that are used for color).
p.s. I just had carrots & hummus in my lunch today- they are tasty, so it’s a good idea to eat them anyway!

Nancy is right, Vitamin A is important for vision and carrots contain beta-carotene which is metabolised to form Vitamin A. I did a wee bit of investigating today and found out that the whole “night vision” thing is an urban legend which came about during the Second World War when the RAF spread rumours about their pilots eating lots of carrots to improve their night vision to cover up the fact that they were using radar technology! You learn something new everyday eh?! 🙂
